Regulation (EC) No 852/2004 of the European Parliament and of the Council of 29 April 2004 on the hygiene of foodstuffs provides in its annex that “Food business operators must ensure that food handlers are supervised and have instructions and / or training in food hygiene adapted to their professional activity ”.
